Researchers, led by Dr. Derrick Bryce-Smith of the University of Reading in England, have discovered that a specially prepared solution of Zinc sulfate, when taken orally, can be used to determine the status of zinc, using the activity of Gustine, a zinc dependent enzyme in saliva.

In their studies (published in The Lancet in 1985) they showed that when administering 10 ml of the zinc sulfate solution, a lack of taste or perception of delayed taste reveals a state of zinc deficiency while an immediate perception of the taste of the solution indicates that the person has a normal zinc intake. Subsequent studies have shown that this test is reliable and reproducible.
