Stefano de Pieri grew up along the waterways of the Veneto, that region of Italy that culminates at the Adriatic Sea at Venice. His childhood was spent surrounded by laughter, politics, music and, most particularly, food. Everything was grown and gathered in good season, and every part of it was used, whether it was the fowls in the yard, the pig every year named Maurice, or the vegetables and herbs grown in the garden or gathered wild along the streams, in the fields or the forest.
From this seasonality of fresh produce, Stefano learnt how to cook delectable and robust dishes based on what was available, a practice he still follows today in his restaurant, Stefano's, in the Grand Hotel in Mildura. This restaurant, acclaimed in the
Age Good Food Guide
with three hats, is the culmination of Stefano's twin passions: the inspirational recipes of his Veneto childhood and the extraordinarily rich variety of produce available in Australia today.
Whe I was asked to work on A Gondola On The Murray, I was as excited about the food as I was about the prospect of infusing the program with great music. The joys of bouncy baroque music, especially from the Venetian School, has been a perfect accompaniment to the series. But beneath the energetic and happy moods of this music, there is also a depth and seriousness to these composers - Vivaldi in particular. I hope this music will provide you with many hours of entertainment, and will inspire you to cook some great food.
